Those will be the tags for each room considering farming:
None - can't farm here

Forest
Mountain
...

What more types should exist?

Eh! Nice :) Dunno about sea and submerged lands at that time, but I've got all the others.
Now another difficult part: planting beans of that time... it will give some headaches.

SURE! Again, check builders forum, as everyone can already make rooms, if you are interested. Just want know what will be the basis of creation of builders (site in internet, book, etc).

Submerged land could not just be like a continental shelf that still has some buildings on it: say a farm got flooded, or something like that.

Also, water could be judged on its depth…

0-2 meters: wadeable
2-5 meters: shallow
5+ meters: deep

or its salinity:

0 1 2 3 4 5 6 7 8 9

0 is pure and fresh, 9 is ocean water.

Meanwhile that maybe it is too much detailed, but later we can make it influence the cultures and crops.

Water dept will influenciate other aspects rather than farming, but it is very important, as bridges were not often at that time.
